Organic argan oil and its use in the food industry
The lightly roasted organic argan oil is used in the food industry due to its nutty flavor as salad oil, marinades, dips, soups or dietary supplements. "Morocco's liquid gold" is extremely valuable, so it is rarely used for frying, although it can withstand high heat.
The special scent of the unroasted organic argan oil reminds of countryside air and rustic atmosphere. It is rarely used in the food industry.

Interesting facts
The argan tree grows very slowly and develops over its up to 150-year lifespan from a thorny shrub to a seven to ten meter tall, gnarled tree. It is only native to southwest Morocco between Agadir and Essaouira, where it can be used but not felled. When the fruits of the tree are ripe, they turn bright yellow and resemble an olive in shape. Each fruit contains one to three smooth oval kernels, which contain the oily, almond-like seeds.
For argan oil production, typically the fallen fruits are used, collected from June to September. Another harvesting method is particularly difficult because the tree cannot be shaken due to its brittle wood and a dense thorn thicket prevents hand-picking directly from the argan tree.
The seeds contain 30%–55% fatty oil. Before argan oil production, the fruits must be shelled, the kernels cracked with stones, the seed extracted and dried. Depending on the processing stage, the kernels are roasted before pressing.
In hand-pressed organic argan oil, the seeds are ground into a brown dough. This is kneaded and mixed with water until a water-oil emulsion forms. By kneading the emulsion, the oil separates from the water and is decanted. It takes up to ten hours of hard work to produce one liter of oil with this method. The yield is also rather low. The hand-produced argan oil has a relatively high water content and is only briefly shelf-stable and often not hygienically perfect.
In machine-pressed organic argan oil, the seeds are pressed with an oil mill under high pressure. Water addition is omitted. The oil yield is higher and the process faster (2 liters per hour), and the oil is more durable. Important hygiene regulations (e.g., HACCP) can also be followed. Machine-pressed organic argan oil contains less acid and is easier to digest. Our SanaBio organic argan oil is therefore machine pressed.
